About postage on postcards.

I received a card with a 5 zloti stamp on it. On website Polish post I see that 6 zloti is necessary for Priority. Can 5 zl be used for Economy?

Yes, 5 PLN is the price for international economy postcard/letter up to 50 g.

I received a postcard from Poland with one stamp on it with a value of:
5GR

Researching on a philately website of Post Poland I found a today value for 5GR of only 0.05 Zloty. Or is 5GR a way of saying that it is postage for an item of 5 gram?

Thank you. It was one of my 50 reported cards of 2018.
I'm confinced I was cheated and card will leave unregistered.

This might be a card sent via the 3rd party provider. Users who do that, often will stick a small value stamp on the card, for the card to have any stamp at all. The cards are then sent in envelope to this provider (in Poland) who then forwards the post to Germany and the cards travel via Deutsche Post. No German stamps are ever applied, as far as I know. Deutsche Post will sometimes postmark the cards but it is not common.

Does the card you received have any postmark of the Polish Post?

I cannot be 100% sure but in my opinion this is not a postmark of the Polish Post.

Normal postmarks are circular but only include the town or post office (for example Krakow 1 meaning the main post office of Krakow), the date and a 2-letter code. The "happy postcrossing" was either a special cancellation (but haven't heard of any last year related to Postcrossing) or just decoration by the user.

This sounds more and more like the user put a small value stamp, hand-cancelled it with a decorative postmark and sent via Deutsche Post. But to be certain, the admins would need to get in touch with the user and have it confirmed.
